The industrialisation of bread making has not only stripped a key staple food of virtually all nutritional benefit but now underlies a growing problem of wheat intolerance. Andrew Whitley, the pioneering founder of the Village Bakery, argues that the time is right for a campaign for real bread. With 25 years experience as a professional baker, Whitley now concentrates on teaching and writing. He received the food-writer’s ultimate accolade when his book Bread Matters won the 2006 Andre Simon Award.
