Sausages are one thing, but what about chorizo, Toulouse sausage, schinkenspeck, lomo, bratwurst or cabanos? All these products are made at Trealy Farm in Monmouthshire with free range pork from their own or neighbouring farms. The Waddington and Swift families met at Abergavenny Food Festival 2005. In less than two years they have won silver at the Wales True Taste Awards and got their name onto the menu at Malmaison. Join them for a tutored tasting of Trealy Farm charcuterie.
