Yun Hider talks about foraging and the culinary and medicinal uses of wild plants. While working in Ibiza, he was inspired by the lives of local fishermen whose catch of fresh fish was brought in daily to the beach restaurants. Over the last twelve years he has found his vocation and his livelihood foraging in the woods and wild places of south-west Wales. The plants he collects, like Sea Purslane, Sea Beet and gorse flowers are eagerly awaited by chefs in top London restaurants like The Ritz, Claridges and The Greenhouse.
