Ian Walker, chef and food-writer, reports back on a remarkable journey up the Mekong river. Setting off in April this year from its low-lying Vietnam delta and finishing at its source in the high mountains of Tibet, he crossed seven countries learning the traditional techniques employed by the river people, sharing the food they ate and understanding the influence of the river on their lives. Ian Walker’s first book, Thirty Miles, was one of the hits of last year’s festival.
